ROASTED ARTICHOKES WITH ANCHOVIES AND AIOLI

Roasted artichokes with anchovies and aioli

INGREDIENTS

  • 9-12 baby violet artichokes 
  • 1 lemon, sliced
  • 2-3 bay leaves
  • Extra-virgin olive  oil, for drizzling
  • Maldon salt
  • 1tsp finely chopped rosemary

For the dressing:

  • 12 anchovy fillets in oil
  • Finely grated zest of 1 lemon 
  • 1 garlic clove, crushed to a cream with a little salt
  • 4tbsp extra-virgin olive oil
  • 2tbsp chopped flat-leaf parsley, to serve

For the aioli: 

  • 2 egg yolks
  • 150ml extra-virgin olive oil 
  • Juice of 1/2 lemon
  • 1 clove garlic, crushed to a cream with a little salt
  • Maldon salt

To serve: crusty bread
