BLACK KALE WITH ANCHOVY AND CROUTON

INGREDIENTS

Big, punchy flavours here – think Caesar salad in overdrive. For the dressing, make sure your egg yolk and oil are at room temperature.

  • 6 thick slices sourdough bread
  • 250ml light olive oil, plus extra for drizzling
  • 300g young, fresh cavalo nero (black kale)
  • 9 anchovy fillets
  •  cloves garlic, crushed
  • 1 large egg yolk
  • 1 heaped teaspoon Dijon mustard
  • 3 tablespoon lemon juice, plus the finely grated zest of ¼ lemon
  • A pinch of dried chilli flakes
