Paleo Spinach and Mushroom Quiche

Paleo Spinach and Mushroom Quiche *GF
 
Ingredients Base:
~1 lb of all natural Ground Turkey or Chicken
~1/2 yellow onion
~1 egg yolk (keep egg white for filling)
~1/4 cup cooked quinoa
~1 tsp Paprika 
~Lemon pepper to taste
~Pink Himalayan Salt to taste
~1-2 tsp garlic powder
Ingredients Filling:
 
~3 Cage Free Organic eggs
~2 cups fresh organic spinach leaves
~1 cup sliced Mushrooms
~3 Green onions chopped
~1 Tbsp Olive oil
~1/4 Cup Goat Fetta cheese
~Parmesan cheese to sprinkle
~Himalayan Salt to taste
~Pepper to taste
~1/2 Teaspoon Paprika (may also replace with chopped Oregano or Basil)
 
Preparation 
 
~Finely chop onions
~Place all the ingredients and the onions for the base in bowl
~Add the egg to the ground Turkey or chicken
~Add spices and instead of breadcrumbs I use cooked quinoa to give the mix consistency. 
~Once the ground Chicken or turkey has mixed evenly with all the ingredients
~Use a 9″ Pie dish or quiche dish and spray with Olive oil
~Line Pie dish with the mixture as you would pastry
~Flatten down firmly and evenly
~Place in Oven and cook at 280 F for 15 min or until cooked but not dark brown (golden)
~While the pie base is cooking in the oven prepare  the Quiche filling
 
Quiche filling
 
~Slightly heat Olive oil in Frying pan and add Paprika until you smell the aroma (careful not to burn)
~Add green onions immediately and sauté until bright green
~Add Mushrooms,salt and pepper to taste and sauté until cooked (you may also add dash of dry white wine for extra flavor)
~Add spinach last until cooked
~If there is excess water from the spinach reduce on low heat (careful not to overcook the vegetables)or pour out excess water 
~In a separate bowl whisk the 4 eggs and 1 egg white, salt, pepper to taste and paprika pour egg mixture  in your Paleo Pie dish 
~Add the cooked ingredients to the egg mixture and feta mix for last and sprinkle with Parmesan cheese
~Cook in oven on 280F for another 20 mins or until cooked.
