Bruschetta with Tenderstem, Garlic, Mushrooms & Feta

Who knew sandwiches could be so healthy? A mix of crisp Tenderstem broccoli, creamy feta cheese and garlic makes for a gourmet yet good-for-you snack.

INGREDIENTS

  • 1 ciabatta loaf
  • 1tbsp olive oil
  • 200g packet Tenderstem broccoli
  • 2 handfuls mushrooms – any variety
  • Large knob butter
  • 1-2 cloves garlic, crushed
  • 200g crumbled feta cheese
  • Handful chopped flat-leaf parsley
